BANNER BANNER RECIPES Pan seared crystal bay prawns served with cauliflower puree and sweet pickled cucumber Ingredients 16 crystal bay prawns (raw) 2 Lebanese cucumbers 300g cauliflower 3 garlic cloves 200ml milk 100ml white wine vinegar 120gram palm sugar 1tsp of chop dill Method 1. Cut the cauliflower in small pieces and put in a pot with the milk and one garlic clove. Bring to the boil and then simmer. 2. Thinly slice the cucumber on each side with a peeler and stop once you get down to the seeds. 3. In a bowl grate the palm sugar and add the vinegar, dill and mix well, add the cucumber. 4. Peel the prawn leaving the heads on. 5. Once the cauliflower is soft, strain into a bowl. 6. Put the cauliflower in the blender adding the milk slowly to become a puree, then add salt and pepper. 7. In a pan heat up to a medium heat 4tbs of oil add the 2 garlic cloves and prawns. Cook 3 mins each side and season. 8. On each plate put 4 small amounts of puree and the sweet cucumber onto the tray to serve. 130 THE RETIREE AUTUMN
